2025 Metricup Chardonnay

This Chardonnay is from the Metricup area, and comes with authentic sustainable credentials from a certified organic vineyard in conversion to biodynamic. Planted in 1998 the vineyard is located on the border of Wilyabrup. The wine has been made in the Chablis style using little
oak and cool fermentations in stainless steel to retain the fruit. . It is completely different in concept to the Kevin John’s in place and style but made without additions of yeast acidity and anything else.

2025 produced exceptional white wines with opulence, structure and ripe fruit characters. Hand-harvested over two days a Flower Day on February 18th and a Fruit Day on February 23. The wine has been predominately tank fermented with a small portion in French oak for texture. Natural yeast and no additions of acidity.

Vintage 2025 at Cullen began in early February after a warm, dry growing season capped off by unusually warm conditions in May 2024 that triggered a rare “double budburst” in the Chardonnay – some shoots tried to wake up before winter, then again after, naturally reducing fruitfulness and leaving us with tiny crops and beautifully concentrated fruit. The was some bird pressure early, but the blossom came through halfway, and the birds seemed to disappear overnight.

The result is a set of whites with lifted perfume, texture and depth, slightly softer natural acidity than 2024 making them delicious even in their youth, and a Kevin John Chardonnay that looks especially powerful and refined.

There was no pause before the reds rolled in, and the long, even ripening delivered another brilliant season for Cabernet: dense, savoury and classically structured. Across the board, 2025 trades the sheer heat and power of 2024 for classical perfume and balance. These wines will drink beautifully now and evolve gracefully in the cellar.   • Bouquet: Attractive and expressive aromas of ripe Mediterranean fruits fig, dates, and stone fruits reveal a consistent and complex backbone that evolves into subtle herbal glances of lemongrass and ginger, gracefully laced with delicate touches of fresh vanilla bean.
  • Palate: Ripe fruit welcomes the palate with rich notes of peach, green apple, and pear. The mid-palate shows beautiful integration, driven by bright layers of kumquat and lemon curd, delivering vibrant freshness and refined acidity that merge seamlessly with a delicate mineral elegance
  • Food: Citrus-cured salmon & fennel slaw
