2023 proved an extended yet very rewarding vintage in the Margaret River & Wilyabrup. with optimal, dry weather conditions paired with the absence of any significant climatic challenges or disease pressure set the scene for a moderate season, ideal for gentle, consistent ripening across all varieties, especially for our 51-year-old Cabernet Sauvignon at Cullen Vineyard.
The Cabernet Sauvignon vines grown in the ironstone-rich soils that define its character. Savoury, rich, and elegant, this wine is a true reflection of Wilyabrup’s unique terroir — shaped by the earth, nurtured by careful hands, and blessed by the sky.
The Scott Henry trellising allowing sunlight to access the fruit from berry set onwards pushed phenolic and physiological ripeness in addition of being dry farmed we aim for the perfect ripening, maximizing flavour, tannin, acid, ph, all coming together at the same time.
The fermentation of both primary and malolactic was natural. The wine spent an average of 35 days on skins with some terracotta amphorae before being basket pressed direct to barrels. All of the wine was aged in French oak for 14 months, of which 40% were new.
