2023 Cabernet Sauvignon

2023 proved an extended yet very rewarding vintage in the Margaret River & Wilyabrup. with optimal, dry weather conditions paired with the absence of any significant climatic challenges or disease pressure set the scene for a moderate season, ideal for gentle, consistent ripening across all varieties, especially for our 51-year-old Cabernet Sauvignon at Cullen Vineyard.

The Cabernet Sauvignon vines grown in the ironstone-rich soils that define its character. Savoury, rich, and elegant, this wine is a true reflection of Wilyabrup’s unique terroir — shaped by the earth, nurtured by careful hands, and blessed by the sky.

The Scott Henry trellising allowing sunlight to access the fruit from berry set onwards pushed phenolic and physiological ripeness in addition of being dry farmed we aim for the perfect ripening, maximizing flavour, tannin, acid, ph, all coming together at the same time.
The fermentation of both primary and malolactic was natural. The wine spent an average of 35 days on skins with some terracotta amphorae before being basket pressed direct to barrels. All of the wine was aged in French oak for 14 months, of which 40% were new.

Vintage 2023 was a low yielding vintage which resulted in some stunning grapes and hence quality wine. In particular Cabernet Sauvignon exhibited the best typicity of varietal manifestation. The 52 year old vines consistently yield well year on year out.

The growing conditions until December were cold and wet and due to the negative Indian dipole and La Niña effects finishing in December 2022 we had an unprecedented dry spell from December until the end of harvest.

Small berry size particularly in white grape varieties produced beautifully balanced wines; Sauvignon Blanc, Semillon, Chardonnay, Cabernet and Malbec all outstanding.

  • Bouquet Perfumed violets & roses laced with wild berries and juicy cassis well framed by a backbone of tobacco leaf and musk, all the scents and elegance of the terroir of Wilyabrup, a wine with great gravitas.
  • Food Drink with wagyu beef & Sauteed Herbed Cremini Mushrooms
  • Palate Poise, with fruit concentration and silky tannins that spread softly across the palate with unctuous juicy satsuma plum mulberry, cherry and cigar box. The well-orchestrated length unfolds fine grained tannins wrapping around the palate.
