The Semillon has been
tank fermented as in previous years, to maintain the vitality and
the fruit freshness, while the Sauvignon Blanc component was fermented
in new oak, with wild yeasts.
The nose is intense with honeysuckle, musk, citric and grassy aromas.
The new oak treatment and the excellence of the fruit gives a long
and pleasantly assertive finish.
This wine has the potential to develop very well in the bottle
for 5-10 years, but is also delightful drinking now, especially
with fish, mild Asian Food and crustaceans.
