2007 MARGARET RIVER WHITE

This
wine is essentially a replacement for the Ellen Bussell White wine and
is made entirely from fruit grown on Cullens own vineyards. As it is made
predominantly from the traditional Bordeaux blend of Sauvignon Blanc and
Semillon, it is bottled in a Bordeaux bottle. However, the wine does contain
a small amount of Chardonnay and this has added complexity and a touch
of richness to the middle palate, without changing the basic structure
of the wine.

This wine provides
further confirmation of the extraordinary quality of 2007

as a vintage for white wines in Margaret River. The delightful
characteristics of this wine are the result of a careful selection
of the varieties used for the blend and subsequently ensuring that
the individual contributions of each great variety produced an optimal
result. This wine, which was tank fermented, consisted of 51% Sauvignon
Blanc, 28% Semillon, 18% Chardonnay and 3% Verdelho. Even though
the contribution by the last of those varieties was small, our recent
tasting showed that it still added significant, positive characteristics
to the wine.

Colour: Straw colour with green tinges
Bouquet: Complex blend of fresh
custard apple, lemon and lime aromas
Palate: Vibrant, rich, round
and complex, reflecting the range of varieties in the blend.
The great strength of Chardonnay in 2007 dovetails perfectly
with the citric flavours provided by the other varieties. Great
acid finish
Cellaring: Drinking very well now and will develop for
two to three years
Food: All crustacean and fish dishes
